Lechon is the most popular dish in the Philippines served on holidays and special occasions such as weddings, birthdays, and anniversaries.
It’s a whole pig marinated with herbs and spices and roasted slowly on a spit over an open fire.
According to the late Anthony Bourdain, famous celebrity chef and food critic,Lechon from Cebu, Philippines, is the best roast pig he had ever tasted.
Back in the day, as Charles Lamb (1775-1834) wrote in his essay, A Dissertation Upon Roast Pig, the family cottage with the pig inside had to be burned down to enjoy this delicacy. Thank goodness, we don’t have to go to that extreme anymore.
